This is one of my favorite pasta dishes! It has so many different ingredients that come together perfectly. There is variations you can make that include different pasta, different cheese, etc. but what I really love is the Nature Sweet Yellow Grape Tomatoes! You just can’t beat the sweet flavor.

Directions:
Try and have all your ingredients ready before starting. This will help to keep your food warm and production running smoothly.
Heat a pot of water to boiling, about 5 quarts generously salted. Add the pasta and cook for the time given on the package. Remember to stir often. When pasta is done, drain, place back in the pot, add olive oil to keep from sticking and keep a lid on it.
In a seperate pan, add about 1/4 cup of the olive oil. Add the minced garlic and onions. Stir frequently on medium low heat and cook till caramelized.
Add the salmon to the onion and garlic mixture and cook for about 2 -3 minutes on each side or till it flakes easily. Add the tomatoes and basil and stir till just heated.
Finish off with your cheese on top. Cover with a lidand let set a few minutes if you’d like your cheese melted.

Superb recipe! I hate fish and I know when the love of my life makes this, I’ll finally be eating something healthy AND it tastes good. I couldn’t even taste the fishyness of the Salmon. It was tender and juicy and just so nice. Thanks for tickling my pallet!
